A really popular option for a Zion National Park guided tour is booking with a tour company.  Depending on the tour you book, this will provide transportation, a professional guide, snacks, water, meals, and accommodations.

Some of the longer Zion tours also include a few extra stops, such as Bryce Canyon and even the Grand Canyon.

There are many tour companies out of Vegas, I looked at the reviews and have listed those with great prices and great ratings. A day trip to Zion National Park from Las Vegas is a super popular option.
